The Ovens have controlled vapor technology which allows the water vapor content in the oven is the same as that of the food. This process is able to cook food fast and produces a higher yield and precise control of internal food temps. There are easy to use controls, simple push button operation with just three inputs. The computerized processor control has settings for doneness levels, browning, cook and hold times, F and C, and a constant cook/hold cycle. Between the two units they can hold up to 9 sheet pans (18" x 26" x 1-1/4") and 18 steam table pans (12" x 20" x 2-1/2"). The Ovens have adjustable wire racks and fully insulated stainless steel doors with a magnetic door latch.
